A comparison of two techniques to discriminate continental origin of Atlantic salmon (Salmo salar L.) off West Greenland ArchiMer
Reddin, David; De Pontual, Helene; Prouzet, Patrick.
Two techniques of stock discrimination both utilizing scales, i. e. termed as classical technique and shape analysis, are compared for discriminating between North American and European Atlantic salmon (Salmo salar L.) caught off West Greenland. Three scales from each of 60 salmon were analyzed: 30 from North American and 30 from European-origin salmon collected from home rivers in 1982. The best results indicated misclassification and error rates of 0% for shape analysis and 5.0% and ± 1.7%, respectively, for the classical technique. A nested ANOVA indicated that variation was greater between scales of salmon of North American and European origin than from several scales from the same salmon. It was concluded that shape analysis with computer-aided...

ArchiMer
Prouzet, Patrick.
Study of fish caught by angling on the Aulne River from 1973 to 1981provides information on the characteristics of Atlantic salmon (Salmo salar) populations and on the characteristics of the fishery. A discontinuity was noted in 1973 in the catch evolution that separates two periods: 1955-1972 (630 salmons each year) and 1973-1981 (161 salmons each years).

Changes in the genetic structure of Atlantic salmon populations over four decades reveal substantial impacts of stocking and potential resiliency ArchiMer
Perrier, Charles; Guyomard, Rene; Bagliniere, Jean-luc; Nikolic, Natacha; Evanno, Guillaume.
While the stocking of captive-bred fish has been occurring for decades and has had substantial immediate genetic and evolutionary impacts on wild populations, its long-term consequences have only been weakly investigated. Here, we conducted a spatiotemporal analysis of 1428 Atlantic salmon sampled from 1965 to 2006 in 25 populations throughout France to investigate the influence of stocking on the neutral genetic structure in wild Atlantic salmon (Salmo salar) populations. On the basis of the analysis of 11 microsatellite loci, we found that the overall genetic structure among populations dramatically decreased over the period studied. Admixture rates among populations were highly variable, ranging from a nearly undetectable contribution from donor stocks...

Characteristics of one sea winter Atlantic salmon stock caught on Elorn river from 1974 to 1984 ArchiMer
Prouzet, Patrick; Gaignon, Jean-louis.
From observations gathered on grilse populations sampled during the fishing period (March -mid-June) or after the fishing season, the authors noted: a strong heterogeneity and length, the mean value of which increase from May to December, a sex-ratio not different from 1 male for 1 female, a high relative fecundity superior to those of spring salmon population sampled. The comparison between fish of local and foreign origins did not allow to observe significant differences between the biological characteristics studied (weight, length, sex-ratio and fecundity).

Effect of salting and cold-smoking procedures on Atlantic salmon originating from pre-or post rigor filleted raw material. Based on the measurement of physiochemical characteristics ArchiMer
Bjornevik, Marit; Cardinal, Mireille; Vallet, Jean-luc; Nicolaisen, Ove; Arnarson, Gudmundur Oern.
Different methods in use for cold smoking of salmon affect product yield and quality. The combinations of filleting time (pre or post), salting methods (dry or injection), salting targets (2.5 or 4%) and smoking temperatures (15 or 25 °C) were studied during 6 weeks of 4 °C cold storage. Salting method had the greatest influence on flesh quality. Injection salting led to 15% higher fillet yield, moderate to strong gaping score, softer texture, and paler fish compared with dry salting. Pre-rigor filleting reduced fillet gaping from a moderate to minor score, but only in dry salted fillets. Smoking at 15 °C reduced yield by 0.5% in injected salted fish, compared with 25 °C. The combination of pre-rigor filleting, dry salting and 15 °C smoking temperature...

Gaignon, Jean-louis; Prouzet, Patrick.

Gaignon, Jean-louis; Prouzet, Patrick.

HISTOLOGY OF THE JAW DEFORMATION IN SALMON OF SOUTHERN CHILE International Journal of Morphology
Venegas,Felipe; Montiel,Enrique; Forno,Pablo; Rojas,Mariana.
In adult salmon of the sea centres in southern Chile, a jaw deformation (JD) has been identified. It affects the dental and hyomandibular bones, which bend ventrally up to 90° of their normal position. The deformation affects also the dental articular bone. This pathology is related to weight loss and increased mortality of the salmons. It was empirically postulated that a probable cause for this anomaly was food from vegetal origin in the diet of the fishes (which are carnivores) Therefore, the present work aims at comparing the biostructure of jaw bone of salmons fed either with vegetal (soja and gluten) formulation or animal formulation, mostly fish powder. Fifty specimens were analyzed from Puerto Montt, 35 having JD and 15 normal control....

Morphological Study and Mineral Analysis of the Lower Mandible of Adult Atlantic Salmon (Salmo salar) from Scotland with Mandibular Deformation International Journal of Morphology
Rojas Rauco,Mariana; Ramírez Maldonado,Emilio; del Sol,Mariano.
Mandibular deformity is a condition that affects the jaw bone of adult salmon and has been observed in Norway and Chile, causing weight loss, poor quality of farmed fish and increased mortality. The causes range from high temperatures of the state of eggs, to poor nutrition phosphorus or vitamin C. This work aims to analyze this deformity by histochemical and mineral analysis technique during an episode presented in centers of the Scotia Sea. Jaw and spinal segments of 21 Atlantic salmon in Scotland were used. These samples were classified into three groups: Group 1: Severely deformed. Group 2: Mildly affected. Group 3: Normal controls. Four jaws per group were fixed in 10 % formalin and embedded in Paraplast, sections of 5 microns were performed using a...

Morphology of the Eyeball, Orbit and Retina of Atlantic Salmon (Salmo Salar) Alevins under Hypoxic Conditions International Journal of Morphology
Pellón,Mario; Rojas,Mariana; Saint-Pierre,Gustavo; Hartley,Ricardo; del Sol,Mariano.
It has been demonstrated that hypoxia retards the growth of fish, reduces the survival of their larvae, deforms their vertebral column, but despite this teleost fish have the ability to completely regenerate many of their tissues, particularly the retina. As we do not have enough information about the effects of hypoxia on the eyeball, orbit and retina of Atlantic salmon (Salmo salar), we propose the following objectives: 1) Compare the morphological changes of the eyeball of fish subject to hypoxia and normoxia. 2) Determine changes in the orbit structure. 3) Describe the retina of salmon alevins. 4). Recognize hypoxic cells using the anti-Hif1a antibody in the retina of alevins as a sensor. 5) Determine the Shh morphogenic expression in alevins exposed...

Nutrients from salmon parents alter selection pressures on their offspring ArchiMer
Auer, Sonya K.; Anderson, Graeme J.; Mckelvey, Simon; Bassar, Ronald D.; Mclennan, Darryl; Armstrong, John D.; Nislow, Keith H.; Downie, Helen K.; Mckelvey, Lynn; Morgan, Thomas A. J.; Salin, Karine; Orrell, Danielle L.; Gauthey, Alice; Reid, Thomas C.; Metcalfe, Neil B..
Organisms can modify their surrounding environment, but whether these changes are large enough to feed back and alter their evolutionary trajectories is not well understood, particularly in wild populations. Here we show that nutrient pulses from decomposing Atlantic salmon (Salmo salar) parents alter selection pressures on their offspring with important consequences for their phenotypic and genetic diversity. We found a strong survival advantage to larger eggs and faster juvenile metabolic rates in streams lacking carcasses but not in streams containing this parental nutrient input. Differences in selection intensities led to significant phenotypic divergence in these two traits among stream types. Stronger selection in streams with low parental nutrient...

Gaignon, Jean-louis; Prouzet, Patrick.

Stock characteristics of Atlantic salmon (Salmo salar) in France: a review ArchiMer
Prouzet, Patrick.
The general characteristics of the main salmon (Salmo salar L.) stocks in the Massif armoricain (Brittany and Lower Normandy), in the Loire-Allier and in the Adour-Gaves-Nive have been summarized. Due to the poor quality of the previous fishing statistics, there is no clear picture of the historical evolution of the salmon stock. However, a dramatic decrease in the endemic range of Atlantic salmon in France can be shown since the mid-18th century a nd more particularly during the last 50 years. The lack of precise informations describing the size of the catches and the levels of exploitation at sea and in the estuaries make it impossible to estimate the impact that exploitation has led on the evolution of salmon stocks. The mean age of salmon in freshwater...

Use of smoking to add value to the salmoned trout BABT
Salán,Eduardo Oliveira; Galvão,Juliana Antunes; Oetterer,Marília.
The objective of this study was to make a comparison between the characteristics of salmoned trout (Salmo truta) and salmon (Salmo salar) in terms of coloration (CIE L*a*b*), proximate composition, pH and sensory attributes of fresh and smoked fillets in order to obtain a possible alternative for the substitution of imported salmon for Brazilian salmoned trout as a commercial equivalent for retail sales. Results showed that no statistical difference was found for most of the sensory attributes analyzed and for pH. Although the coloration of the fillets presented a statistical difference, the trout presented a more intense coloration than the salmon, proving to be, therefore, convenient to agroindustry.
